Chicken Tortillia Soup

Easy Chicken Tortilla Soup

Did you know it’s National Soup Month? Let me share this delicious and super easy Chicken Tortilla Soup recipe with you! Send me a message and tell me how you like it! 

Here’s what you will need: 

1 Rotisserie Chicken 

1 Fajita seasoning packet

1 small Onion- rinsed and cut up 

1 16 oz can of Tomatoes with chilies

1 16 oz can Black beans

1 16 oz Corn

1 Bell pepper (color doesn’t matter, but I like red) -rinsed and cut up

1-2 boxes of Chicken both

2 spoonfuls of prechopped Garlic


Optional:

Shredded cheese

Sour Cream

Tortilla chips 

Jalapenos

Avocados/ guacamole

Cayenne pepper 


In a large pot add 1 and 1/2 boxes of chicken broth, the full packet of fajita seasoning, cut up onion, tomatoes, cut up bell pepper and garlic. Bring to a boil using med heat.

Open the can of black beans and pour off the water it is packaged in leaving the beans in the can. Then add fresh water to the can (with the beans still inside) and pour off that water (this just rinses the beans). Add the beans to the pot. Repeat this step for the can of corn. 

Remove the skin from the rotisserie chicken and using two forks pull the chicken apart from the bone to make shredded chicken. You could also just cut the chicken up into small pieces. Add the chicken to the pot and let simmer so all the flavors can marry. Add more broth here if necessary. Let simmer for about 20-30 mins and dinner is served!
